Camping and Fresh Strawberry Yogurt Cake

Another week has gone by and it’s time to pen this column again. It is 4:30 a.m. and both boys are off to work. The rest are still asleep. I could use a few more winks myself, but first I need to make sure this column is done.

We had a few warm days with the temperature almost hitting 90 degrees. We had thunder in the distance last night, but the storm missed us.

This is son Kevin’s last week of “school” before they come around to pick up his completed work. I wish he would have been able to have his 8th grade graduation, but such is life. It will really be different to not have any of our children in school anymore. It’s another reminder that we aren’t getting any younger.

Our whole family went camping over Memorial Day weekend. It was enjoyable to spend a few days and nights together. It was so enjoyable to wake up and see the grandchildren still sound asleep from a hard day.

We enjoyed pontoon rides, fishing, swimming, campfires, and, of course, making s’mores—those sticky, messy s’mores. Grandson T.J. was bound and determined to roast his own marshmallows for his s’more. Of course, we didn’t let him eat that marshmallow. It was dragged around in the sand before it ever hit the fire. He had so much fun doing that, and he doesn’t know we switched the marshmallow with a clean one. That little boy puts in many miles in a day’s time. When granddaughter Jennifer, age two, and T.J. get together, you better be on the lookout. Those two can find something to get into pretty fast. Such sweet and precious blessings. Abigail had lots of fun in the water, but she decided one time down the water slide was enough. She didn’t like the big splash-landing in the lake.

The men did a lot of fishing, so we will have a fish fry one night with all the fish they caught. We also depended on them to do the grilling. Camping is fun, but it always seems like we snack too much.

Ryan is 10 months old today. He enjoyed the pontoon rides and swinging in the swing by the lake. Baby Allison is 5 months old today. She is such a bright-eyed, active little girl. She has bright blue eyes and not much hair. Abigail loves holding her little sister.

It is funny to see Ryan and Jennifer get into a little squabble about wanting the same thing. Ryan’s scream can get loud when he’s annoyed. Jennifer has an ornery look on her face and you can almost see when she’s ready to start some mischief. I could go on and on about my sweet little grandchildren, to which I’m sure all you grandmothers can relate. Our family, when together, is a total of 19 already, so we are quite a group.

Loretta’s special friend Dustin went with us. Also, daughter Lovina has a special friend too now. His name is Matthew, and he also went camping with us. There was not one dull moment all weekend and by the time Tuesday morning came around, I was still tired. Tired, but happy I could spend celebrating my birthday weekend with my loving family making memories, precious memories! Do I thank God often enough for all the blessings in life? With my husband Joe still laid off from work, the load seems a little heavier, but we are so blessed and need to be thankful for all we have.

Daughter Lovina, son Kevin, and I helped Joe finish planting the rest of the gardens. I really hope to get some more sweet corn in there somewhere.

Fresh Strawberry Yogurt Cake

Cake:
2 1/2 cups all-purpose flour, divided
1/2 teaspoon baking soda
1/2 teaspoon salt
zest of 1 lemon
1 cup butter, softened
2 cups sugar
3 eggs
1 tablespoon lemon juice
8 ounces Greek yogurt, plain or vanilla
12 ounces fresh strawberries, diced

Glaze:
1 cup powdered sugar
2 tablespoons lemon juice

Cake: Preheat oven to 325 degrees. Grease and flour 10-inch Bundt pan. Sift together 2 1/4 cups flour, baking soda, and salt. Mix in lemon zest and set aside. With a hand mixer, cream together butter and sugar until light and fluffy. Beat in one egg at a time then stir in lemon juice. Alternate beating in the flour mixture and yogurt, mixing just until incorporated. Toss the strawberries with the remaining 1/4 cup flour and gently stir them into the batter. Pour batter into Bundt pan and bake in preheated oven for 60 minutes or until toothpick inserted in the center comes out clean. Cool at least 20 minutes in pan, then turn onto a wire rack and cool completely.

Glaze: Whisk together and drizzle over top of cake when completely cooled.

Fishing outings and home projects

We are all still home from the “stay home, stay safe” order due to the coronavirus.

We were to host church services this past Sunday but church services in our community were postponed until further notice. Maybe too often we take going to church for granted. It didn’t seem right to not meet with our fellow church members to worship God. We were home reading from the scriptures in the Bible, still honoring our Heavenly Father. I know that we have so much more family time while all this is going on.

My husband Joe and the boys head for the lake with our boat when they get too bored and need a way to relax. They came home tonight with their limit of bluegill which helps a lot on the grocery bill when they aren’t bringing in money at their jobs while things are closed.

With church being delayed we have time to get some more jobs done around here. We are painting our basement walls with Drylok paint that helps keep moisture out. It seems since we had a fire a few years ago, with all the water ending up in our basement, it has been more damp down there. Hopefully sealing off the walls with white paint will also brighten it up. It’s really looking good so far.

Joe has also set up a mini greenhouse and is growing some vegetable plants from seed. It is very small but it’s a start. He enjoys doing that. I told him when he started planting seeds in trays that I am not interested in that, so he said I don’t have to help. It’s kind of like a hobby to him but it will save us money to grow our own tomato, pepper, etc. plants. If he’s willing to do it, I won’t complain.

The girls made pizza tonight using the pizza dough recipe in my new cookbook, Amish Family Recipes. I will share the recipe at the end of this column.

This is now over a day later and I neglected to finish this column. Yesterday was spent painting in the basement again. I am sore from using muscles I don’t use every day. Our basement walls have a brick like finish, so it is taking much longer than I had anticipated. I love how it looks though, so it is worthwhile.

Joe and the boys took the boat out on a nearby lake again and came home with their limit of bluegill. The fish were filleted and bagged for the freezer. We will have quite a few meals of fish now. It warmed up to 75 degrees yesterday so they were a little sunburned. Joe put some chicken on the grill and that was our supper. We sat outside and ate it from the grill. It was nice but then started cooling off fast.

This morning it’s windy and 45 degrees and the temperature keeps dropping. Joe is going to put a little heat out in the greenhouse. We had let our coal stove go out since it has been so warm. We might have to start it up again, but Joe wants to clean it up first. It shouldn’t be too long before we can let it go out for the summer.

Easter will be on Sunday, reminding us of Jesus’ resurrection. Easter brings hope! Let us keep our faith! Until next week, stay healthy, be safe, and may God bless each of you!

 

My Favorite Pizza Dough

1 cup warm water
1 tablespoon active dry yeast
2 tablespoons granulated sugar
2 tablespoons vegetable oil
1 teaspoon salt
2 1/2 cups flour

In a medium bowl, mix water, yeast, and sugar. Let stand for 10 minutes. Add oil, salt, and flour and mix well. Press dough into a greased 10×15-inch jellyroll pan. Layer on sauce and toppings of choice and bake at 350 degrees until crust is golden brown, about 30 minutes.

After Mother’s Day, Lovina’s all set for fishing: license, rod, and life jacket!

Hi. This is Lovina’s 18-year-old daughter, Verena.

I hope all you readers are doing great! Part of my Mother’s Day gift to my dear mother is writing the column for her this week. I also gave her a lighted crystal cube that says “I Love You Mom.” Dad and all of us children gave her two potted rose bushes, and a life jacket. Dad got her fishing licenses so she can go out fishing with us. Also a new fishing rod, so she is set to go.

It has been a rainy day! Mom took me to the eye doctor today as I have been having problems with my right eye since Sunday morning. I have an infection in my eye lid and I think the doctor called it blepharitis. My eye lid dried up which caused it to stick to my cornea which was why my vision is blurred. The doctor gave me antibiotic eye drops to put in my eyes for a week. He wants me to put it in both eyes to keep the infection from spreading into the other eye.

Around May 24, my friend Lori’s Yorkie dog will give birth to her puppies. I get first choice out of the puppies. I am hoping one will be a female. I just love little Yorkies. Sister Liz has two and I am so attached to them! They are so sweet and can be a lot of fun!

I want to thank Pamela for the money she sent to help me purchase the Yorkie. That was so kind and thoughtful of you! I will send you a personal thank you yet. May God bless you!

Dad is outside grilling tonight. I love when he grills because he will often yodel while grilling. It just always lifts my mood! If it wasn’t raining, we children would be out there with him.

Last week we went fishing three different days. We caught a total ofLakeNearLovina 182 Bluegill. I enjoy fishing. The first day I went fishing was with sister Susan and her boyfriend Mose. Susan and I were catching so many fish that Mose hardly had time to fish since he had to put the worms on our hooks. If I really had to put those slimy worms on the hook, I could have but I wasn’t going to tell Mose that.

The next night I went fishing with sister Liz and her husband Tim. Susan and Mose went along too. It was enjoyable. Dad and my brothers and Mose’s brother Freeman took another boat out as well.

Boat2016One afternoon and evening we had both our boats and Tim’s boat out on the lake. Uncle Jacob, cousins Emma and Elizabeth, and their friends Menno and Manuel went along that time. Joseph, Lovina, and Cousin Benjamin fished from our friend’s dock since we had enough on the boats.

Saturday was a nice sunny day to weed the flower beds for Mom. One thing Mom does not like doing is weeding her flower beds. I still have more weeding to do around the house. It makes it look so much better.

Reading is one of my most favorite things to do. I just love to read every free moment I have. I like Karen Kingsbury’s books. I am reading the Baxter Family series now. I borrow sister Susan’s books. Karen makes her books so realistic that I have a hard time putting them down.

Our new horse Rex is doing great for us. Brother Benjamin and I use our horse Mighty on weekends to go to the Community Youth Center or to Sunday evening singings. He is such a calm, safe horse. Mom likes taking Mighty to town because he is calm around all the traffic. Uncle Amos trained Mighty and sold him to us.

I like this verse: “Stress makes you believe that everything has to happen right now! Faith reassures you that everything will happen in God’s timing.”

I will share the recipe for my favorite salad with you readers. I love salads.

Taco Salad

1 pound hamburger
1 package taco seasoning
1 medium head lettuce, chopped
1 large onion, chopped
4 medium tomatoes, chopped
8 ounces cheddar cheese, shredded
1 package taco chips

Dressing:

8 ounces Thousand Island dressing
1/3 cup white sugar
1 tablespoon taco seasoning
1 tablespoon taco sauce

Brown hamburger. Add taco seasoning, reserving one tablespoon of seasoning for dressing.

In separate large bowl, place chopped lettuce, and add all ingredients except chips, ending with cheese.

Combine ingredients for dressing. Toss salad with chips and dressing.

Amish noodle making, morel mushrooms, and fresh fish!

We are having a lot of rainy days this past week. The garden hasn’t dried up enough for us to get in it, so we still haven’t been able to plant more vegetables. I am really eager to get more garden planted and by next week it will be time to put out tomato and green pepper plants, etc. I like to wait until the middle of May to put these plants in the garden in case it gets too cold—frost can hurt the tender leaves and plants.

Joe and the children are all hoping for the rain to quit for tonight. They have plans to go fishing with the boat on a nearby lake. Son-in-law Timothy is planning to bring his boat so some can ride with him. I will stay home and enjoy the peace and quiet. Daughter Elizabeth might stay here with me and we’ll enjoy visiting. I want to make supper early before they go. Fish and French fries will be on the menu. Friday evening my husband Joe, son Joseph, and Timothy took the boat out on the lake. They came back with over fifty fish; mostly bluegills. When I prepare the fish I dip them in a batter and deep fry them. Some like to eat them as a sandwich with bread and mayonnaise.MorelMushrooms

This week we also had fresh mushrooms and I also dip and fry those. At the local consignment auction on Saturday they sold some mushrooms that a local Amish lady found. It was to help benefit nephew Emanul and Mary Kay with their hospital bills. Joe bid for the mushrooms as he loves fresh morel mushrooms (that grow in wooded areas but are hard to find) and he also was able to do a good deed this way. Needless to say, the mushrooms did not last long.

At the auction we bought a three-year-old horse. So far we are really happy with him. He has one thing he doesn’t like and that is water puddles along the road. He doesn’t do more than shy away from the water, but for three years old, I think he is doing really well. We had the whole family choosing names and settled on Rex. Rex is very well behaved and friendly with the other horses out in the pasture.

NoodlesBeforeCuttingDrying2016 NoodlesDrying2_2016Yesterday, sisters Verena and Susan, daughters Elizabeth, Verena and Loretta, and I assisted sister Emma with her work preparing for church at her house. We washed laundry and made six batches of noodles with around twelve and one-half dozen eggs (that’s 150 eggs!). Emma needs the noodles for Sunday lunch. We will have Rule Church and it usually lasts until 2:00 p.m. A lunch will be served and a few dozen people will go to eat at one time so the services continue on. On the menu will be chicken noodle soup. I took my noodle maker (to cut the noodles) along and we also used Emma’s. It made the project go faster. Emma now has five six- and eight-foot tables of noodles drying. After they are dried for a week, they can be stored in air tight containers. I am sure it will take quite a few pounds on Sunday.

Tomorrow is Ascension Day [May 5] and the Amish in our community honor this day with fasting and praying until lunch time. Jacob and Emma and family, sisters Verena and Susan, Timothy and Elizabeth, and the girl’s friends will all come for lunch. Joe plans to grill venison steaks on the charcoal grill. He likes to use the charcoal grill and leaves the gas grill for me. He says the flavor of the meat is better and I think so too, but I go for what is easier. I will prepare the rest of the meal in the house. Everyone is bringing a dish so it will be simple.

Happy Mother’s Day to all you readers who are mothers! A mother thinks about her children day and night. Even when they are not with her. We love them in a way they will never understand until they become a mother.

I will share the recipe for M&M chocolate chip bars daughter Verena made. If you need a lot of bars these will be good to make and very easy.

M&M Chocolate Chip Bars

1 cup butter, softened
1 1/2 cups sugar
1 1/2 cups brown sugar
2 teaspoons vanilla
1 teaspoon water
5 eggs
2 teaspoons soda
2 teaspoons salt
5 cups flour
1 cup chocolate chips
1 cup M&M’s

Cream together butter and sugars. Add vanilla, water, and eggs. Beat well. Stir together flour, soda, and salt. Add to batter and mix well. Stir in chips and M&M’s. (Variation: just use all chocolate chips.) Put on 1 or 2 large cookie sheets (with edges) and bake at 350 degrees for 25 to 30 minutes.
